Rico McCloud recently completed the inaugural season as our chef at Swamp Donkey properties. Rico is from Yukon, Oklahoma. At an early age, Rico learned homestyle southern cooking from many members of his family. His professional training began at the Carolina Inn located in his hometown of Chapel Hill, North Carolina where he became skilled in American cuisine. During the span of Rico’s 25 year career he has worked in nearly every possible role in the kitchen. Rico has spent the majority of his culinary career working in fine dining establishments located in Chapel Hill and Oklahoma City.
